Feeling quite pleased with myself on this wintery Sunday- firstly, having bought an Instant Pot a little while before Christmas, today, I took it off the ‘shelf of regrets’ and made my first meal in it - a hearty beef casserole ( from the manufacturers website). It was amazingly tender and, well, hearty!
So craving a bit more creativity, I managed to search the Substack content to find your post from last year where you recommended Catherine Phipp’s pressure cooker recipe book, and it’s now on order. So glad I bit the bullet 😇

Thank you so much for lifting the lid on the mysteries on the instant pot India- I’m sold. Sausage and mash is one of my family’s favourite meals but the amount of washing up/ timings is a pain so this sounds like a revelation!
I'm very curious about the Instant Pot, I have a horror of the old pressure cookers which scared me half to death when my Mother used one in the 70's! I have an Everhot oven (similar to an Aga) which slow cooks everything to perfection. Not sure I'd use an Instant Pot enough, it has been on my John Lewis wish list for a while though!!!
Very tempted India, thank you so much and for the gifted recipes! I know you said yours can provide for 6-8 people but do you have the 5.7 litre or the 8 litre?
India, I’m so tempted by the IP and spent time in Peter Jones this week (am I much the wiser?!). If I get an 8 litre one, can I still cook say rice for two in it?
I am also a total devotee of my instant pot and also of Catherine Phipps. Her recipes really do work and are inspirational. Her Keema Peas are the ultimate comfort food and her Salad Nicoise is so clever !I am a convert and I do now have 2 pressure cookers- the instant pot and a stove top Kuhn Rikon which is wide and shallow so absolutely brilliant for sautéing meat etc- it has a thick heavy base. It also then can go straight to the table. I would have completely ruled out a manual pressure cooker due to 1970s childhood memories but I gained confidence with the IP and Catherine’s direction so took the plunge- I now frequently use both at the same time- greens in the Instant Pot, main dish in the stove top. I just wish that I had the Instant Pot when my children were young- it would have been a life saver xx
I love my instant pot! I bought it when my house flooded and I had 10 months in temporary accommodation with dodgy kitchens. It saved my sanity. Now I’m back home I still use it at least 3/4 times a week. I make soup while I’m working, homemade yoghurt, delicious stews, green veg at the last minute. It’s a real workhorse.
I am toying with the idea of buying a second one, with an air-fryer function. Mostly because the version I have is a mini (3 litre) and I’d like a proper size one so I can cook for more people. And if I’m buying a new one I figured I might as well get some extra uses out of it…
Do you know, I would get a 2nd one. I have one big enough to feed 6-8 people and it makes such a difference. I bet you really fell in love with it in temp accommodation - total lifeline.
Oh I did… I remember making the kedgeree from Modern Pressure Cooking and being so pleased I had made something so comforting and homely in about 20 minutes in one pot. It’s still one of my go to recipes.
Thank you for the encouragement- I think I’ll take the plunge and buy a larger one. I suspect it will be invaluable over Christmas
Absolutely MOUTH-WATERING and...an absolute MUST-HAVE revelation. Desperately want to know what's on the Shelf of Regrets...indispensable for kit-avoidance tips. ( also potential top title for bestselling romantic novel )
It IS quite a good title. Spiraliser obviously, bread machine (which makes ok bread but I hate the shape of the loaf, The Shape of The Loaf also quite good title), juicer bullet thing, hundreds of tins (not a baker), egg poaching pan with separate cells, Nespresso machine, etc etc.
This post is brilliant, thank you. I LOVE my instant pot (new house, non-existent kitchen and it has been a life-saver). However, recipes seem to be few and far between so definitely going to order this.
I love a new hobby! These recipes look delicious. I have a lasting fear of pressure cookers; they were all the rage when I was a child and my mum fell for it big time. I was so frightened I wouldn’t go in the kitchen when she was using it! Can you do all the searing etc in the Instant Pot?

Yes but if you’re cooking for 2 most of the time I’d get a smaller one.

TY, India. You had me at ‘Marcella Hazan’ but how do you adapt her recipe to the Instant Pot. Timing? Settings?
I do it on autopilot but you find an IP or pressure cooker recipe for ragu and follow those timings. See also https://www.americastestkitchen.com/cooksillustrated/articles/7896-how-to-make-any-recipe-in-an-instant-pot and I'm sure Catherine Phipps's Substack has advice too.

That was what I found - the recipes were all for very obvious things. Either of these books will massively broaden your repertoire.

Yes, and they used to explode. They don't any more! Yes re searing etc.
