As air flows through the stem, an air pocket or embolism occurs, preventing the absorption of water.'
Very good tip, thank you. Also searing soft-stemmed flowers (sticking the stalks in boiling water and counting slowly to 10) makes them last miles longer.

I put them in boiling water for 10 seconds - I guess flame same principle? Quite scary idea but will try it.
